As a first-year student at St. Therese MTC Colleges' La Fiesta, I'm passionate about pursuing a degree in hospitality management with a focus on professional training and equipping students with the skills they need to carry out tasks involving food production, lodging operations, and food-and-beverage service operations.
What is BSHM all about?
Bachelor of Science in Hospitality Management Course covers multiple topics in addition to cooking, including housekeeping, business, travel, and services, as well as the NSTP (National Service Training Program) run by the CWTS (Costal Guard). It is a very fulfilling career because you get to be happy while serving others.
Hospitality Management is a four-year course that teaches us on how to conceptualize, plan, develop, and oversee different aspects of hotel, restaurant, and resort operations. However, it helps us to communicate better with people. We can also learn new things while we are studying and also it helps me to achieve my dreams in life and have a successful career.

House Keeping
In our third meeting with our teacher at HPC 2, the first discussion is about the tools and how and where to use them. folding bed, how to tidy your guest room, and how to take reservation calls through telephone. My experience is how to make a tidy bed, where the entrance of the pillow should be placed, and how to place the bedsheet in the right container. Not just one or two, but five bedsheets, and when you are at work, you should be alone in a room to clean and fix their bed. Two types of beds were arranged for us: traditional and duvets. Your nails should be short and clean.
Last time, we were cleaned in the TSS building. Every floor has a group, and we were on the third floor. Others are in the faculty room, in the conference room, or outside, and we are assigned to the outside. A broom, mop, and cleaning cloth are what you should need when you clean. Clean water will not be lost. We are being taught how to properly clean because one day we might become housekeepers on a ship or in a hotel. Even if you don't have a job, when you clean, even in your room, it's our job to clean.
What is the equipment to prepare for cleaning the floor:
● Mopping tile floors is the best way to get it clean and sparkling, but you’ll need to start by taking off as much dust and debris as you can. Sweep the entire area you wish to clean, making sure to pay attention to the edges and corners where dust can gather.
● After Sweeping, prepare a mop bucket with water and a specialist floor cleaning liquid like Anti-Bacterial Floor Cleaner. Always follow the instructions on the label.
Tour experience
Our School informed us that we have 2-Day Heritage and Hotel Industry Immersion. This 2- day industry immersion aims to expose students to the different world class lodging facilities in Iloilo City to learn about hotel operations and experience the world class service and facilities of the hotel. The Heritage tour allow us, students, to experience the rich cultural heritage of the Ilonggo’s and the city of Iloilo for deep appreciation of our culture and heritage. We go to 3 hotels in Iloilo were foreigner and celebrity stays. They gave us an opportunity to experience to stay in these hotels and to have a tour in every hotel. We also go to Churches and Brandy Museum in Iloilo. Hospital industry is one of the main industries in this world and this is the relationship between guest and host. Hospitality also involves showing respect for their guest, treat them as you treat yourself, and provide what they need when they are in the hotel. Hospitality teaches us about humility, about communication, and warm welcome to our guest. Don’t forget to put a smile on your face when you work in every job you take that’s what I’ve learn in this tour, even you have a problem you have to set a side those feelings. Remember to look on the bright side.

Chicken lollipop with velouté sauce
Ingredients:
For chicken lollipops marination
12 chicken wings
1 Egg
1.5 tsp Garlic paste
1 tsp Crushed black pepper
1/2 tsp Salt
2 tbsp Soya sauce
5 tbsps. Corn flour
For velouté sauce
3 tbsp or 45g -Unsalted
3 tbsp or 30g- Butter
2 cups or 500ml - Flour
Chicken Stock
1/4 tsp Salt
1/4 tsp White Pepper
Instruction:
This sauce is going to have two main steps.
First step is to make the roux.
Second step is to add the stock (Blond sauce).
Step 1. Add roughly three tbsps. Of butter. Let the butter melt down nice and slow.
Step 2. Add roughly three tbsps. of flour (30gr)
Step 3. This allows the roux to cook a little bit more evenly so the roux can't clump up. We cooked the roux for two minutes.
Step 1. Add the chicken stock. c
Step 2. Start to skim the impurities off the side. Step 3. Turn down the heat to low and wait for 15 minutes.
Step 4. Add ¼ of a tsp. Of pepper and some salt to taste. Step 5. Take the saucepan, give that a sieve.
Bechamel sauce with Spaghetti pasta
Ingredients:
5 tablespoons butter
¼ cup all-purpose flour
1 quart milk
1 teaspoon salt, or more to taste
1/4 teaspoon freshly ground black pepper.
Spaghetti pasta
1/2 cup grated sharp cheddar cheese.
Instructions:
Step 1. Boil water for spaghetti pasta
Step 2. In a medium saucepan over medium heat, melt the butter and stir in the flour to make a roux.
Step 3. Allow the roux to cook for 1 to 2 minutes while stirring.
Step 4. Add the milk a little at a time, whisking it continuously, allowing the mixture to blend and thicken. This will take about 10 minutes. Lower the heat to medium-low if needed.
Step 5. Add the salt, pepper, cheddar cheese. Continue stirring until the cheese has melted.
Step 4. Put now the spaghetti pasta.
Roasted Chicken
Ingredients:
1 whole of chicken
Salt
Black pepper
Garlic
2 tbsp. Honey
60ml Oyster sauce
½ Lemon
Vetsin/Monosodium glutamate
How to Roast a Chicken Step-By-Step:
Step 1. Season the chicken inside and out.
Step 2. Add the butter to the chicken and the pan.
Step 3. Stuff the cavity with celery.
Step 4. Bake until the chicken is fully roasted.
Eggs Benedict with Hollandaise sauce
For the hollandaise sauce:
10 tablespoons unsalted butter
3 large egg yolks
1 tablespoon lemon juice
1/2 teaspoon salt
Dash cayenne
Instructions:Step 1. Start with the freshest eggs you can get. The older the eggs
are, the more likely they are to fall apart in the simmering water.
Step 2. Make sure the water is barely simmering (with just a few bubbles
appearing every now and then). If the water is at a full boil (lots of rapidly
moving bubbles), the chances of the egg separating when it hits the water are
greater.
Step 3. Don't forget to add the vinegar to the water.
Step 4. Crack the egg into a small bowl before adding it to the water.
Then gently slide the egg from the bowl into the simmering water.
Step 5. Time the poaching egg carefully. Four minutes should be just
about right.
Step 6. Drain the
poached eggs well.

Step 1. Blend the egg yolks a full 30 seconds. Blending them for less
time makes for a runnier sauce, plus it heats the eggs yolks a bit.
Step 2. Melt the butter gently, so it's not hot and sputtering (this can
cause the sauce to break).
Step 3. Add the butter in a slow, steady stream as the blender runs.
Adding the butter too fast keeps the sauce from properly emulsifying.
Step 4. If the sauce is emulsified but too thin for your liking, pour it
into the pot you melted the butter in and heat over low heat, whisking
constantly until it gets more body.
Analyzation and Reflection:
Since I want to enroll in the BSHM program, I went with that option. I chose it because I want to learn more knowledge, abilities, tactics, and communication techniques that I can use to my advantage when I run a profitable business or have a meaningful work. Who teaches us how to do hospitality management at the highest level possible, serving their clients and those in related professions while preserving the highest moral standards. I am aware that running a hotel can be both fun and challenging. This course will teach you the importance of speaking to every customer and guest in a professional, polite, and warm fashion. The enjoyable parts are the situations that are normally part of our everyday lives, yet being able to understand, manage, and achieve the expected result brings out the satisfaction from within.
